Asian Cucumber Salad

This Asian-style cucumber salad is a tasty mix of fresh cucumbers and red onions tossed in a sweet and savory dressing with a hint of ginger and a kick from red pepper flakes. You can eat it as a salad in the summer or as a side dish with any Asian-themed meal.

Ingredients:

  • 2 cucumbers, thinly sliced
  • 1 red onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes adjust to taste
  • Fresh cilantro leaves for garnish
  • Toasted sesame seeds for garnish

Instructions:

In a mixing bowl, combine the thinly sliced cucumbers and red onion

In a separate small bowl, whisk together the minced garlic, rice vinegar, soy sauce, sesame oil, honey, grated ginger, and red pepper flakes

Pour the dressing over the cucumbers and onion, tossing to coat evenly

Let it marinate in the refrigerator for about 15-20 minutes to allow the flavors to meld

Before serving, garnish the salad with fresh cilantro leaves and toasted sesame seeds
