Grilled Vegan Portobello Burgers

If you dont want to eat meat, these grilled vegan portobello burgers are a tasty and filling alternative. With the marinade, the mushrooms get a savory and smoky flavor that makes for a delicious plant-based barbecue.

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 4 whole-grain burger buns
  • Vegan mayo, lettuce, tomato, and onion for garnish

Instructions:

In a bowl, whisk together balsamic vinegar, soy sauce, olive oil, minced garlic, smoked paprika, and black pepper to create the marinade

Place portobello mushrooms in a shallow dish and pour the marinade over them

Ensure each mushroom is coated evenly

Let them marinate for at least 30 minutes

Preheat the grill to medium-high heat

Place marinated mushrooms on the grill, gill side down

Grill for 5-7 minutes on each side, basting with the marinade occasionally

Toast the burger buns on the grill for a minute or until lightly browned

Assemble the burgers by spreading vegan mayo on the buns, adding the grilled portobello, and topping with lettuce, tomato, and onion
