Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup fresh blackberries
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Wooden skewers, soaked in water
Instructions:
Blackberries, honey, garlic, smoked paprika, salt, and pepper should all be put in a blender
For the blackberry BBQ sauce, blend until smooth
Mix the chicken cubes with 1/2 cup of the blackberry BBQ sauce in a bowl
Put it in the fridge for at least 30 minutes
Warm up the grill over medium-high heat
Put chicken cubes that have been marinated on soaked wooden skewers
If you want, you can switch out the chicken cubes for your favorite vegetables
Apply olive oil to the skewers and place them on the grill
Cook for 12 to 15 minutes, turning the skewers every so often, until the chicken is fully cooked and has a nice char
You can dip the chicken kabobs in the rest of the blackberry BBQ sauce before serving
