Bean Burgers with Grilled Corn, Pesto Heirloom Tomatoes

Indulge in veggie burger heaven with these delicious bean burgers featuring the flavors of grilled corn, pesto, and heirloom tomatoes. Perfect for a satisfying meatless meal

Ingredients:

  • 2 cans 15 oz each of black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 whole wheat burger buns
  • 1 cup fresh corn kernels
  • 1/2 cup pesto sauce
  • 2 cups sliced heirloom tomatoes
  • Lettuce leaves for garnish

Instructions:

To make the black beans mostly smooth, use a fork or potato masher to smash them in a large bowl

Leave some chunks behind

Red onion, minced garlic, cilantro, cumin, paprika, salt, and pepper should all be added to the mashed beans

Mix everything together well

Split the mixture in half and shape each half into a burger patty

Set a grill or grill pan over medium-high heat to get it hot

It should take about 4 to 5 minutes of grilling to get grill marks and a little char on the corn kernels

They should be cooked for four to five minutes on each side or until they are hot all the way through and have grill marks

Put the whole wheat burger buns on the grill and toast them for one to two minutes, until they get a little brown

Spread a lot of pesto sauce on the bottom half of each toasted bun before putting the burgers together

Put a grilled bean burger patty on top of the bun that has pesto on it

Grilled corn kernels, sliced heirloom tomatoes, and lettuce leaves should be put on top

Add the top half of the bun to finish

Enjoy your bean burgers right away with grilled corn, pesto, and heirloom tomatoes
