Ingredients:
- 1 lb pulled pork
- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 2 tbsp BBQ sauce
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions:
Cook the rotini pasta according to package instructions, then drain and let it cool
In a large mixing bowl, combine pulled pork, cooked pasta, cherry tomatoes, red and green bell peppers, red onion, and cilantro
In a separate small bowl, whisk together mayonnaise, BBQ sauce, apple cider vinegar, Dijon mustard, salt, and pepper to create the dressing
Pour the dressing over the pasta mixture and toss until well combined, ensuring all ingredients are coated
Refrigerate the salad for at least 1 hour to allow flavors to meld
Serve the BBQ Pulled Pork Pasta Salad on lettuce leaves and garnish with additional cilantro if desired
